Cheers to the New Years! We wish everyone a safe and Happy New Years. Enjoy the recipe below for an easy New Years snack!

Cheese Wafers By Angela McPhaul

  • 1-1/2 c all-purpose flour
  • 1 tsp kosher salt
  • ¼ tsp cayenne pepper
  • ¼ tsp paprika
  • 1/8 tsp garlic powder
  • Freshly ground black pepper
  • 8 oz shredded sharp Cheddar, at room temperature (do not buy cheese already shredded)
  • 1 stick unsalted butter, at room temperature
  • 1 tbs sour cream
  • 1 large egg

Preheat to 375 degrees F. Line 2 rimmed baking sheets with parchment paper.

Combine the flour, salt, cayenne, paprika, garlic powder and a few grinds of black pepper in a food processor and pulse until mixed. Add the Cheddar, butter and sour cream and process until the mixture forms a ball. Form the dough into a disc, then wrap it in plastic wrap and refrigerate until firm, about 30 minutes.

Roll out the dough and cut it with a small cookie cutter or roll into into a log and cut 1/4” slices.

Bake for 12-14 minutes or until golden brown.
