Cheese Wafers By Angela McPhaul
- 1-1/2 c all-purpose flour
- 1 tsp kosher salt
- ¼ tsp cayenne pepper
- ¼ tsp paprika
- 1/8 tsp garlic powder
- Freshly ground black pepper
- 8 oz shredded sharp Cheddar, at room temperature (do not buy cheese already shredded)
- 1 stick unsalted butter, at room temperature
- 1 tbs sour cream
- 1 large egg
Preheat to 375 degrees F. Line 2 rimmed baking sheets with parchment paper.
Combine the flour, salt, cayenne, paprika, garlic powder and a few grinds of black pepper in a food processor and pulse until mixed. Add the Cheddar, butter and sour cream and process until the mixture forms a ball. Form the dough into a disc, then wrap it in plastic wrap and refrigerate until firm, about 30 minutes.
Roll out the dough and cut it with a small cookie cutter or roll into into a log and cut 1/4” slices.
Bake for 12-14 minutes or until golden brown.
