Construction was completed in late 2005 for the new 27,000 square foot, 450-seat dining hall at Ft. Meade. The new foodservice facility includes a 7,000 square foot kitchen, a 4,000 square foot serving area, and a 900 square foot quick serve outlet. A separate snack bar with a grill and cooking line was designed for quick carry out that serves more than 200 for lunch.
The client was looking for more retail-oriented public areas that had the look and feel of a restaurant. Curved cafeteria counters that offer cooking in view of the customer, and a wide selection of menu items helped to achieve this goal.
The kitchen was also designed to support an off site feeding program for field missions. The combined cafeteria, snack bar, and field missions, was designed to serve close to 2000 employees for lunch. The Freedom Inn won second place in the coveted 2006 Philip A. Connelly Awards for Excellence in Army Food Service.
